Chef Joe and Caileigh's
After over two decades in the business, Chef Joe has come full circle. He started out his culinary career, at 16, making and delivering pizza’s for Paul’s Pizza in Vineland, New Jersey. While in college at Susquehanna University, he managed Vito’s NY Style Pizza and Italian Restaurant and then moved on with stints in Wildwood and in Copenhagen, Denmark.
After moving to Southwestern Pennsylvania, Chef Joe went international, opening Caileigh’s Restaurant in Brownsville, PA and then Thompson Tavern. His cuisine was French based with an Italian-American Lean. In 1999, after producing an award winning restaurant in Brownsville, he opened Caileigh’s in the Barton Grey House in Uniontown.
In 2004, Caileigh’s was named 2nd best New American Restaurant in Pittsburgh(even though we’re in Uniontown), by the readers of Pittsburgh Magazine. In 2005, Chef Joe was named Pennsylvania’s Restauranteur of the Year, by the Pennsylvania Restaurant Association. He continues to produce award winning cuisine at Caileigh’s Restaurant in Uniontown.
Chef Joe now brings his award winning style to Pasta Lorenzo. His attention to detail and commitment to quality and freshness will be instilled at Pasta Lorenzo. Ingenuity along with tradition will also be on the menu as Chef Joe brings old family favorites and ties them with his innovative cooking style.
Chef Joe offers two experiences to the Uniontown area, intimate fine Dining at Caileigh’ Restaurant and traditional Italian fare at Pasta Lorenzo. He hopes that you will appreciate the passion that he calls food.
Community is also very important to Chef Joe and his family. His events such as the Celebrity Chef Event to raise money for Colon Cancer(visit www.celebritychef.com), Chef Joe’s Omelet Run for charity, Hair of the Dog Run, the Carei Kid’s Christmas Concert, along with supporting many other causes helps make Fayette County their home. For this they were named Pennsylvania’s Good Neighbor award winner for 2007, sponsored by American Express and The National Restaurant Association.
